Strawberry Shortcake Power Wheels Dessert

Ingredients & Tools
- 4 Strawberry Shortcake Power Wheels
- 1 cup sliced strawberries
- 1 teaspoon lemon juice
- ⅔ cup heavy whipping cream
- 2 teaspoons granulated sugar (optional)
- ½ teaspoon vanilla extract
Directions
- Make strawberry sauce: In a small skillet over medium heat, add sliced strawberries and lemon juice. Allow the strawberries to cook down for just 1–2 minutes, until juices start to release. Transfer to a heat proof bowl and rest on the counter for 5 minutes before transferring to the fridge.
- Make the whipped cream: In a cold metal bowl using an electric mixer, beat together heavy whipping cream, sugar (if using) and vanilla on medium-high speed until stiff peaks form. This should take 3–5 minutes.
- Assemble: Place one Strawberry Shortcake Power Wheels bar in a small shallow dish. Cover with whipped cream and spoon on fresh strawberries.
Notes
- Feel free to use freshly sliced strawberries to top the shortcake. Cooking them down gives them more flavor and juice without adding extra sugar, compared to traditional strawberry shortcake.
- Whipped cream will keep for 1 day in the fridge. Rewhip for a minute before serving. Or, add straight to your morning coffee.
